When there is a potluck, people always ask me to bring broccoli salad,
because it is so very delicious.
in Oregon 20+ years ago:
...it was delicious....
I couldn't believe the surprisingly heavenly combination of the sweet grapes and fresh crunchy broccoli with salty bacon. I had to get the recipe and give it a try.
Actually, to be real honest, I triple the recipe, and hold back enough to feed my own family at home the following day. They get so sad when they see the salad made in our kitchen, without having an opportunity to have it served at our table at home.
Favorite Broccoli Salad Recipe
5 cups broccoli (cut into florets)
1/3 cup craisins
1/2 red onion (chopped)
8 strips of bacon (browned, drained, crumbled)*
2 cups grapes (cut in half)
1/2 cup slivered almonds
2/3 cup mayonnaise
1/4 cup honey
2 Tbs vinegar
Place all the salad ingredients in a large bowl
Mix the dressing ingredients in a small bowl, then add to salad and toss
- if you don't have a red onion, use 3 green onions, chopped
- if you don't have craisins, use raisins
- if you don't have honey, use sugar
*I fry the bacon in our George Foreman grill
and frying the bacon is time-consuming.
